Strawberry Lemon Cake

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp salt
1/3 cup vegetable oil
1 cup granulated sugar
2 eggs
1/2 tsp vanilla extract
2 tsps lemon zest
2 tbsps fresh lemon juice
1/2 cup buttermilk
1 cup strawberries, diced
1 tbsp all-purpose flour
Glaze
1/2 cup powdered sugar
1 tbsp fresh lemon juice (more or less depending on the consistency you want)
Directions
Preheat oven to 350 F and line an 8x8 pan with parchment paper (or lightly grease with butter).
In a medium bowl, whisk the flour, baking powder and salt, and set aside.
In a large bowl, whisk together the oil, sugar, eggs, vanilla, lemon zest and lemon juice. Mix until well combined.
While slowly mixing, add flour mixture and buttermilk in two batches (some flour, then some milk, then the repeat with the rest of the flour and the rest of the milk).
In a small bowl, toss the strawberries and 1 tbsp flour.
Add the strawberries to the batter and gently fold in the batter.
Pour batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
Prepare glaze by simply whisking together the melted butter, powdered sugar, lemon juice and vanilla, then pour glaze over the loaf once it finishes cooling.
