Ingredients:
1/2 cup butter, room temp
3/4 cup granulated sugar
3 eggs, room temp
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp strawberry extract
1/4 cup buttermilk
1 cup strawberry jam
Glaze:
1 1/2 cups powdered sugar
2-3 strawberries, mashed
2-3 tsps milk
Optional: 1/4 tsp strawberry extract
Directions:
Preheat the oven to 350 F and prepare an 8x8 pan by greasing it with butter or lining it with parchment paper.
In a large bowl, cream together the butter and sugar until smooth and creamy.
Add the eggs, one at a time, and mix well after each addition.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter-sugar mixture and mix until well combined.
Add the strawberry extract and buttermilk to the batter. Whisk everything together until you have a smooth and uniform batter.
Fold in the strawberry jam.
Pour the batter into the prepared pan and smooth the surface using a spatula.
Bake for 30-35 minutes or until an inserted toothpick comes out clean.
To make the glaze: mix the mashed strawberries, powdered sugar (1/2 cup at a time), and 1 tbsp of milk. Add more milk until it reaches your desired consistency (1 tbsp at a time).
Let the cake cool completely before adding the glaze.
