Pear cake:
1 1/2 cups all purpose flour
2 tsps powdered chai spice
1 tsp cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
1/4 cup light brown sugar
3/4 cup (1 ½ sticks) unsalted butter, softened
2 large eggs
1/4 cup chai (I just mixed powdered chai spice with whole milk)
1 teaspoon vanilla extract
2-3 pears, peeled, cored and grated
Icing:
1 1/2 cup powdered sugar
Cup of Chai (I mixed powdered chai spice with milk)
Directions:
Preheat oven to 350°F. Grease/butter pan (or use parchment paper) then set aside.
In a mixing bowl, sift together the flour, powdered chai, cinnamon, baking soda, and salt.
In another mixing bowl, cream together sugars and butter. Add eggs, one at a time, followed by the vanilla.
Pour half the dry ingredients into the wet ingredients and mix together. Add half of the milk and continue to mix the batter together. Repeat with the remaining flour mixture and milk.
Make sure you mix so no lumps are present (do not over mix though)
Fold in the grated pear until evenly spread throughout the batter.
Pour batter into the prepared pan and bake for 30-40 minutes or until a toothpick comes out clean. Depending on pan you use, it could take less or more time. Make sure you keep checking on it.
Allow cake to cool, about 30 minutes to an hour
For chai spiced icing:
Mix powdered sugar with a couple tablespoons of chai. Mix until combined. Add in more chai as needed. Only add a little bit at a time so it doesn’t get too liquidy! Drink the rest of your leftover chai :)
