Pumpkin Tiramisu
Ingredients:
Ladyfingers
Tiramisu Filling:
8oz mascarpone
4oz Cream cheese
3 tbsp pumpkin
Pumpkin pie spice, a few dashes
5 tbsp brown sugar, packed
Whipped cream mixture (part of the filling):
1 cup heavy whipping cream
4 tbsp powdered sugar
2 tbsp liqueur
Coffee Mixture:
1 cup of coffee (as strong as you like)
2 tbsp liqueur
Topping:
Cocoa powder
Pumpkin Pie Spice
Directions:
In a medium bowl using an electric mixer, combine the heavy whipping, powdered sugar, and liqueur to make the whipped cream. Mix until soft peaks form.
In a separate bowl, whip the mascarpone and cream cheese until combined. Then add in the pumpkin, pumpkin pie spice, and brown sugar, Mix until well combined.
Then fold in the whipped cream mixture into the tiramisu filling mixture with a spatula until combined.
For the coffee mixture, combine the cups of coffee with the brown sugar and cinnamon liqueur.
In a 8x8 pan, add in the ladyfingers by dipping each one into the coffee mixture and placing into the pan side by side until one layer is formed.
Next, add in a layer of the tiramisu filling. Repeat until pan is full and the filling is the final layer.
Dust top layer with cocoa powder and pumpkin spice (I combined the 2 together rather than at separate times)
Refrigerate for at least 4 hours, preferably overnight.
