Peach Crumble Pie

Ingredients
Crust
2 cups all purpose flour
1/2 cup vegetable oil
3 tbsps cold water
1/2 tsp salt
1/4 tsp baking powder
Peach Filling
5 peaches, peeled and sliced
1/2 cup granulated sugar
2 tbsps minute tapioca
1 tbsp cinnamon
1 tsp lemon juice
Crumble
1 cup all purpose flour
1/2 cup brown sugar
2 tsps cinnamon
1/2 cup unsalted butter
Directions:
Preheat oven to 450 F. Grease a 9 inch pie dish. Set Aside.
In a bowl, whisk together the dry ingredients for the crust.
Add the cold water and vegetable oil. Mix until it forms a ball. Press it evenly into the pie dish, going up the sides as well. Set in fridge while you prepare the filling.
In a bowl, combine the peaches, granulated sugar, tapioca, cinnamon and lemon juice. Let it sit for 15 minutes.
In another bowl, combine the crumble topping ingredients with your hands until it’s crumbly.
Using a fork, poke holes on the bottom on the pie crust. Sprinkle a thin layer of the crumble on top of the crust then pour the peach filling. Top with the rest of the crumble.
Bake at 450 F for 10 minutes then lower the temperature to 350 F. Bake for 35 more minutes. Let cool before serving.
