Ingredients:
2 cups all-purpose flour
2 tsps baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
1 1/2 tbsp orange zest
1/3 cup fresh orange juice
3 large eggs
1 tsp vanilla extract
3/4 cup full-fat greek yogurt
1/2 cup vegetable oil
Directions:
Preheat the oven to 350°F, and grease a 6-cup Bundt pan. Set aside.
In a small bowl, combine flour, baking powder, soda, and salt. Set aside.
In a large bowl, add the granulated sugar and orange zest.
Use your fingers rub the zest into the sugar. Do this for around two minutes.
Add the orange juice, eggs, oil, greek yogurt and vanilla, and beat well to combine.
Whisk through the dry ingredients until combined, but don't over-mix the batter.
Pour batter into the prepared pan.
Bake the cake for around 38-43 minutes or until a toothpick inserted into the cake comes out clean.
Let the cake cool in the pan for 10 minutes before removing it and letting it cool to room temperature on a cooling rack.
To serve, the cooled cake can be dusted with icing sugar or drizzled with a orange glaze.
