Ingredients
For cookies:
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1/2 cup granulated sugar
1/2 cup powdered sugar
1 egg
1 tsp vanilla
1/2 tbsp maple extract
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cream of tartar
For icing:
1 cup powdered sugar
1 tbsp maple syrup
1-2 tbsps milk
Directions
Preheat oven to 375 F, and line a baking tray with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
In a large mixing bowl, beat the butter, oil, and BOTH sugars until combined.
Beat in the egg, vanilla, and maple extract.
Add the flour mixture to the liquid mixture, folding it in until just combined. Do not overmix.
Line baking sheets with parchment paper or silicone baking mats.
Scoop dough onto the baking tray. I did 6 on a tray.
Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
Remove to wire racks to cool.
For icing, combined the powdered sugar and maple syrup. Add in 1/2 tbsp of milk at a time until it reaches your desired consistency.
Frost cookies once cookies are cool.
