Lemon Blueberry Bars
These lemon blueberry bars are soft, buttery, and filled with that sweet blueberry and lemon flavor. A tender lemon dough forms both the base and the topping, then gets finished with a light layer of lemon curd and a simple glaze.
This dessert is the perfect balance of lemon and blueberry which I LOVE!

Ingredients
For the Bars:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 tsp vanilla extract
Zest from 1-2 lemons
2 tbsps lemon juice
1 3/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
14 oz blueberry preserves, filling or jam
For the Glaze:
1/2 cup powdered sugar
1-2 tbsps milk
About 1/3 cup lemon curd, for topping
Directions:
Preheat the oven to 350°F. Line an 8x8 pan with parchment paper. Set aside.
In a bowl, combine the flour, baking powder and salt. Set aside.
In a medium bowl, cream together the butter and sugar for 3-5 minutes.
Add the eggs, vanilla, lemon zest and lemon juice, mixing until fully combined.
Add the dry mixture and mix until just incorporated. Reserve 1/2 cup of dough.
Press the remaining dough into the prepared pan and top with your choice of blueberry filling.
Drop the reserved dough in small pieces over the filling. It’s okay if it doesn’t completely cover the top.
Bake for 45–50 minutes or until golden brown. Let the bars cool completely.
Spread a thin layer of lemon curd over the top of the bars. Whisk together the powdered sugar and milk to make the glaze and drizzle over the bars.
