The weather this last week has been absolutely BEAUTIFUL and it finally feels like Spring (even though knowing Illinois, it’s probably gonna snow this week lol). I swear my soul cravessss the sun and fresh air. I always think seasonal depression doesn’t hit me until it’s the first warm day after a long winter and suddenly I feel like a brand new person 😌🌹 so please take advantage of the beautiful weather and get outside (after you bake this cake of course😉)
We’re starting off this series with an all-time favorite recipe of mine: Lemon Blueberry Coffee Cake🍰🫐🍋 It’s so simple to make and doesn’t require any advanced baking techniques. It has a tender, moist crumb with bursts of sweet blueberries and fresh lemon, topped with a crunchy crumble and a lemony glaze. For me, lemon and blueberry scream springtime because it captures the bright and fresh flavors of the season.
