Ingredients:
1/2 cup unsalted butter, room temp
1/3 cup brown sugar
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla extract
1 large egg, room temp
1 1/2 cups all purpose flour
2 tbsps granulated sugar
1 tsp cinnamon
Frosting:
3 tbsps unsalted butter, room temp
3 tbsps cream cheese, room temp
1/2 tsp cinnamon butter extract (or sub for vanilla)
1 1/4 cups powdered sugar
Directions:
Preheat oven to 350 F, and line a baking tray with parchment paper. Set aside.
In a medium bowl, beat together the butter, brown sugar, vanilla, salt and baking powder until well combined.
Add the egg and mix to combine. Scrape the sides of the bowl to make sure everything is incorporated.
Stir in the flour until combined.
In a small bowl, combine the granulated sugar and cinnamon.
Scoop the dough using a cookie scoop, roll the cookies into a ball, then coat them in the cinnamon sugar mixture.
Place the cookies about 2 inches apart on the prepared pan. Slightly flatten the dough.
Bake the cookies for 10-12 minutes, or until it’s just starting to brown around the edges.
Cool for a few minutes on the tray then transfer to a wire rack.
To make the frosting:
In a small bowl, beat the unsalted butter and cream cheese until light and creamy.
Add in the extract and powdered sugar. Beat until creamy.
Pipe or spread frosting on top of the cooled cookies.
