Ingredients
1/2 cup unsalted butter, softened
1/2 cup light brown sugar
1/4 cup granulated sugar
1 large egg
2 tsps vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/4 cup dark cocoa powder
Oreo Cream Cheese Frosting
1/4 cup unsalted butter, softened
2 oz cream cheese, softened
1 tsp vanilla extract
1 1/4 cups powdered sugar
Oreos, for garnish
Directions
Preheat oven to 350°F, and line a baking tray with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking soda, salt and cocoa powder.
In a medium-sized bowl, beat together the butter, brown sugar, and granulated sugar on medium speed for 1 minute or until combined.
Mix in egg and vanilla extract.
Add the dry ingredients to the wet, and mix until well-combined.
Scoop dough and place on prepared baking sheet.
Bake at for 12-14 minutes or until cookies no longer look doughy in the center. Cool completely on the pan.
To make frosting: Beat the butter, cream cheese and vanilla extract on high speed for 1-2 minutes until combined. Turn the mixer to low speed then slowly add the powdered sugar.
Beat on high for 1-2 minutes until creamy and the frosting is at a good consistency to pipe.
Spread or pipe on cooled cookies. Garnish with crushed Oreos!
