Ingredients
Apples:
1 large apple, peeled and diced
2 tbsps unsalted butter
3 tbsp light brown sugar
1/2 tbsp bourbon
1 1/4 tsp cinnamon
Pinch of nutmeg
Oatmeal Cookies:
3/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup light brown sugar, packed
2 tbsps granulated sugar
1 large egg, room temp
1 tsp vanilla extract
1 1/2 cups rolled oats
Glaze:
1/2 cup powdered sugar
1-2 tbsps milk
Directions:
To make the apples: In a saucepan, cook the butter, sugar, spices, bourbon and diced apples over medium to high heat, stirring occasionally, until tender and golden.
In a medium bowl, whisk the flour, cinnamon, baking soda, and salt. Set aside.
In another bowl, beat the butter and sugars until light and fluffy, about 3-5 minutes.
Add the egg and vanilla, and beat until combined.
Add in the flour mixture and mix until combined. Fold in the oats.
Fold in caramelized apples and mix until just combined.
Chill dough in the fridge for at least an hour.
Preheat oven to 350F and line a baking sheet with parchment paper.
Using a medium cookie scoop, place cookies on baking sheet 2" apart. I did 6 cookies per sheet.
Bake for 16-20 mins or until edges are browned but center is still soft and unset.
Cool for 5 minutes on baking sheet, then transfer to cooling rack to cool completely.
Combine sugar and milk in a bowl. Add in 1/2 tbsp at a time until it’s your desired consistency. Drizzle over cooled cookies with a spoon.
