Carrot Cake

Ingredients
1 1/4 cups all purpose flour
1/2 tsp + 1/8 tsp baking soda
1/2 tsp + 1/8 tsp baking powder
2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/4 tsp salt
1 cup sugar
2 eggs
1/2 cup vegetable oil
1/4 cup plain greek yogurt
1/2 tsp vanilla
1 1/2 cups finely grated carrots
Frosting
3 oz cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla
1 1/2 cups powdered sugar (more or less)
Directions
Preheat oven to 350 F, and line a loaf pan with parchment paper. Set aside.
In a small bowl, whisk together the flour, baking soda, baking powder, spices, and salt. Set aside.
In a large bowl, beat the sugar, eggs, and oil till thick and foamy, 1-2 minutes. Add the sour cream and vanilla, and mix well. Add the dry ingredients and stir untill just combined.
Fold in the carrots.
Transfer batter to loaf pan. Bake for 45-60 minutes, or until an inserted toothpick comes out clean. Cool completely.
For frosting, beat together cream cheese and butter untill smooth. Add vanilla, salt, and powdered sugar.
