Caramel S'mores Bars
a little messy but the best desserts are!
For some reason, I hate sharing s’mores desserts because the dessert itself feels so childish and I feel like all the bakers out there are judging me. It just feels so…. unsophisticated. Maybe it’s the marshmallow aspect or the fact that s’mores was a dessert we loved as kids. I’m not sure why I think this because no one has ever expressed this to me before but that’s a quick look into how my brain works, assuming the wrong thing ALWAYS lol.
Whether you think s’mores is childish or not, this is a dessert worth making! These caramel s’mores bars are soft, chewy, gooey, and layered with melty caramel chocolate, crispy graham crackers and fluffy marshmallow. They have all the classic s’mores flavors with an extra caramel layer that makes them feel so rich and decadent. How’s that for a sophisticated dessert?😌

For the bars:
1/2 cup (113g) unsalted butter, melted
3/4 cup (150g) brown sugar
1/4 cup (50g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 3/4 cups (220g) all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
For the filling:
1–2 sheets graham crackers, broken into squares
7-9 Hershey’s caramel chocolates squares (about 1.5 packages), slightly chilled (I put it in the fridge 30 min before I started)
Chocolate chips, optional
For the topping:
7 oz marshmallow fluff
Caramel, for drizzle
Directions
Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and glossy. Add the eggs and vanilla extract and whisk until fully combined.
Fold in the flour, baking powder, and salt until a soft dough forms.
Layer the graham crackers on the bottom of the prepared pan. Press about two-thirds of the dough on top of the graham crackers and spread it evenly over the top. Add the chilled caramel chocolates in an even layer on top, breaking it into pieces if needed. You can add more chocolate chips at this step if desired.
Spread the remaining dough over the top. It does not need to fully cover the filling.
Bake for 28–35 minutes or until the edges are golden brown and the center is just slightly soft.
Let the bars cool completely before spreading the marshmallow fluff on top. Feel free to torch the top and add a caramel drizzle.
