Ingredients
For the Muffins:
2 cups (250g) all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs, room temperature
3/4 cup (150g) granulated sugar
1/3 cup (80ml) vegetable oil
1/2 cup (120ml) whole milk, room temperature
1 tsp vanilla extract
For the Apples:
1 1/4 cups (150g) peeled, diced apples
2 tbsp butter
3 tbsp brown sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tbsp water
For the Crumble Topping:
1/2 cup (62g) all-purpose flour
1/3 cup (64g) granulated sugar
1/2 tsp ground cinnamon
1/4 cup (56g) cold unsalted butter, diced
Glaze:
3/4 cup (90g) powdered sugar
2-3 tbsp milk
Caramel, for drizzling
Directions:
Preheat your oven to 400 F. Line a 12-cup muffin tin with paper liners or grease lightly.
For the apples: In a medium skillet, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and water. Cook for 5–7 minutes, stirring occasionally, until the apples are softened and syrupy. Set aside to cool slightly.
For the crumble: In a small bowl, mix flour, sugar, and cinnamon. Add cold butter and mix with a fork or your fingers until crumbly. Chill in the fridge while making the batter.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk eggs and sugar until smooth. Add oil, milk, and vanilla extract, and mix until combined.
Gradually fold the dry mixture into the wet ingredients using a spatula. Be careful not to overmix. Gently fold in the cooked apple mixture, including any syrup from the pan.
Divide the batter evenly among the muffin cups. Top generously with the streusel topping.
Bake at 400 Ffor 5 minutes, then keep the oven door closed and lower the temperature to 375 F and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack.
For the glaze: Mix powdered sugar and milk until smooth, then drizzle over cooled muffins. Drizzle a generous amount of caramel on top as well.
