Banana Cake Bars
This easy banana cake recipe is the BEST way to use any ripe bananas sitting in your kitchen! It makes an incredibly moist, delicious cake with loads of banana flavor as well as a sweet and creamy cream cheese frosting to compliment it.

Ingredients
6 tbsps salted butter, room temp
3/4 cup granulated sugar
1 cup bananas (about 2 large bananas), mashed
1 large egg, room temp
1 tsp vanilla extract
1 cup all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/4 cup buttermilk
Cream Cheese Frosting:
4 oz cream cheese, softened
4 tbsp butter, softened
1 cup powdered sugar
1/2 tsp vanilla
2-3 tbsps milk
Directions
Preheat oven to 325°F and set a rack in the middle of the oven. Prepare an 8x8 inch pan by buttering/greasing it and lining it with parchment paper (for easy removal).
In a large bowl, cream together the butter and sugar into a smooth texture and the butter is light yellow in color.
In a separate bowl, whisk together the mashed bananas, egg, and vanilla.
Add the banana mixture to the creamed butter and sugar and mix until well combined.
In a separate bowl, sift together the flour, baking soda, cinnamon, nutmeg and salt.
Add the dry ingredients and buttermilk to the wet ingredients mixture, a little at a time, alternating between the two. Mix all together into a smooth batter.
Pour the batter in the prepared pan.
Bake for 30 minutes, or until a toothpick inserted into the center of a loaf comes out dry.
Set pan on a wire rack to cool for 10 minutes
Remove cake from the pan and let it finish cooling on the wire rack.
To make the frosting: Beat the cream cheese and butter together until smooth and creamy. Add in the powdered sugar 1/4 cup a time. Add milk as needed, 1 tbsp at a time. Once sugar is mixed in completely, add in the vanilla.
Spread frosting on top of cake once it’s completely cooled.
Optional: Top with walnuts, cinnamon, or any other topping you’d like!
