Apple Spice Cupcakes

Ingredients:
4 large eggs, room temp
1 2/3 cups granulated sugar
1 1/4 cup unsalted butter
15 oz apple sauce
1 tsp vanilla extract
1 tbsp bourbon
2 cups all-purpose flour
2 tsps baking powder
1 tsp baking soda
1/2 tbsp + 1 tsp ground cinnamon
1/2 tsp allspice
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp salt
1 1/2 cup apples, peeled and diced
Cream cheese frosting
1/2 cup unsalted butter, softened
8 oz cream cheese, full-fat, softened
3 cups powdered sugar
1-2 tbsps milk (if needed)
Directions:
Preheat oven to 350℉ and line 2 muffin pan with cupcake liners. Set aside.
Brown the butter over medium heat, stirring constantly until the butter begins to foam and turns a golden brown, emitting a nutty aroma. Take the butter off the heat and allow to cool. Alternatively, you can just melt the butter but you will need to reduce the amount of butter to 1 cup.
In a small bowl, toss the apple with 1 tsp cinnamon. Set aside.
In a medium bowl, combine the flour, baking powder, baking soda, spices, and salt. Set aside.
In a large bowl, add the eggs, granulated sugar, brown butter, vanilla extract, bourbon and apple sauce. Beat until combined.
Fold in the dry ingredients with a spatula until just combined. Then fold in the apples.
Divide the batter evenly into each muffins tin.
Cook for 22-27 minutes or until an inserted toothpick comes out clean. Let the muffins cool in the pan for at least 10 minutes before transferring to a wire rack.
To make the frosting: In a large bowl, beat together the butter and cream cheese until smooth and no lumps remain.
Slowly beat in the powdered sugar about 1 cup at a time. Beat in 1-2 tablespoons cream as needed until the desired sweetness and consistency is reached.
Frost the cupcakes once they’re cooled, and enjoy!
