Apple Pie Crumble Bars

Ingredients
Crust & Topping
1/3 cup granulated sugar
1/4 cup brown sugar
1/2 tsp baking powder
1 1/2 cups all purpose flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp vanilla
10 tbsps butter, cut into cubes
1/3 cup quick oats
Apple Filling
3-4 large apples, peeled and thinly sliced
1/4 cup unsalted butter, melted
1 tbsp all purpose flour
1/4 cup brown sugar
2 tsps cinnamon
1/4 tsp nutmeg
1 tsp lemon juice
1 tsp vanilla
Optional: 1 tbsp bourbon
Directions
Preheat oven to 350ยฐF and prepare a 8x8 pan by lining with parchment paper. Set aside.
In a medium bowl, combine the granulated sugar, brown sugar, flour, cinnamon, baking powder, and salt. Add the butter and vanilla, and beat until the butter is broken up into small irregular pieces. If necessary, use your fingers to rub the butter into the flour.
Once the mixture is crumbly and the butter is the size of pebbles, place in the refrigerator while you prepare the filling.
In a separate bowl, combine all ingredients for apple filling. Stir until well combined.
Scoop about 2 cups of the crumble and place in the prepared pan. Press the mixture evenly into pan to form the crust.
Add the apples on top of the crust. Arrange them in tight layers, overlapping the pieces.
Fold in the oats into the remainder of the crumb topping then sprinkle it over the apples.
Cover with foil and bake for 30 minutes. Remove the foil and bake for another 25-30 minutes, until the topping is light golden brown and the apples are tender (insert a sharp knife to check).
Place pan on a wire rack to cool. Drizzle with caramel sauce.
